The First Original Pancake House was founded in 1953 by Lester Highet and Erma Hueneke in Portland, Oregon. Drawing upon their many years of experience in the culinary field, Lester and Erma created the core of this unique and original menu that remains true to its origins to this day. Our recipes are made by hand from scratch daily and are authentic and original. We use only the finest ingredients including fresh Grade AA eggs, hard wheat unbleached flour, sourdough yeast starter made from scratch in our own kitchen, 93 score butter, real whipping cream, and coffee that is roasted, blended and ground to our exacting specifications. The preparation of our food takes extra time and special care so please be patient as you wait for your meal – the extra time is well worth the wait as nothing replaces freshness and quality ingredients for great taste.
